Steps

Step 1: Bake the Chocolate Sponge

  1. Preheat oven to 350°F (175°C). Grease and line an 8-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add egg, milk, oil, and vanilla extract. Mix until smooth. Gradually stir in boiling water.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes. Let cool completely.

Step 2: Make the Cherry Compote

  1. In a small saucepan, combine cherries and sugar over medium heat. Cook until the cherries release their juices.
  2. Stir in the cornstarch slurry and cook until thickened. Let cool completely.

Step 3: Assemble the Ice Cream Cake

  1. Place the cooled chocolate sponge in a springform pan.
  2. Spread softened chocolate ice cream over the cake layer. Top with a layer of cherry compote. Freeze for 4-6 hours, or until firm.

Step 4: Make the Ganache

  1. Heat heavy cream until steaming and pour it over the dark chocolate chips. Let sit for 2 minutes and whisk until smooth.

Step 5: Decorate the Cake

  1. Remove the cake from the springform pan and transfer to a serving plate.
  2. Pour ganache over the top, allowing it to drip down the sides.
  3. Garnish with whipped cream, fresh cherries, and chocolate curls.
