Elegant Southern Pineapple Pecan Cake

Ingredients:

  • 1 box of yellow cake mix
  • 1 can (20 oz) of crushed pineapple with juice
  • 1 1/2 cups of granulated sugar, divided
  • 1 package (8 oz) of softened cream cheese
  • 1/2 cup of softened unsalted butter
  • 4 cups of powdered sugar
  • 1 cup of chopped pecans
  • 1/2 cup of sweetened shredded coconut

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Follow the package instructions to prepare the yellow cake mix batter, then evenly divide the batter between the two prepared pans.
  3. Bake for 25-30 minutes or until a toothpick comes out clean when inserted in the center. Allow the cakes to cool completely on wire racks.
  4. In a medium saucepan, combine the crushed pineapple (with juice) and 1 cup of granulated sugar. Heat over medium, stirring frequently, until it boils. Simmer for 10 minutes, then remove from heat and let it cool.
  5. In a large bowl, beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar, mixing until creamy.
  6. Once the cakes have cooled, spread the pineapple mixture over the top of one cake layer. Place the second layer on top.
  7. Frost the entire cake with the cream cheese frosting. Sprinkle chopped pecans and shredded coconut over the top for extra flavor and texture.
  8. Chill the cake in the refrigerator for at least 1 hour before serving.
