Elegant Southern Pineapple Pecan Cake
Ingredients:
- 1 box of yellow cake mix
- 1 can (20 oz) of crushed pineapple with juice
- 1 1/2 cups of granulated sugar, divided
- 1 package (8 oz) of softened cream cheese
- 1/2 cup of softened unsalted butter
- 4 cups of powdered sugar
- 1 cup of chopped pecans
- 1/2 cup of sweetened shredded coconut
Instructions:
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Follow the package instructions to prepare the yellow cake mix batter, then evenly divide the batter between the two prepared pans.
- Bake for 25-30 minutes or until a toothpick comes out clean when inserted in the center. Allow the cakes to cool completely on wire racks.
- In a medium saucepan, combine the crushed pineapple (with juice) and 1 cup of granulated sugar. Heat over medium, stirring frequently, until it boils. Simmer for 10 minutes, then remove from heat and let it cool.
- In a large bowl, beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar, mixing until creamy.
- Once the cakes have cooled, spread the pineapple mixture over the top of one cake layer. Place the second layer on top.
- Frost the entire cake with the cream cheese frosting. Sprinkle chopped pecans and shredded coconut over the top for extra flavor and texture.
- Chill the cake in the refrigerator for at least 1 hour before serving.
