Enchanting Garlic Butter Steak with Creamy Mashed Potatoes

Ingredients

For the Steak:

  • 2 ribeye steaks (about 1 inch thick)
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon fresh rosemary leaves
  • Salt and pepper, to taste

For the Mashed Potatoes:

  • 4 large russet potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter
  • 1/4 cup sour cream
  • Salt and pepper, to taste
  • Fresh chives, chopped (optional, for garnish)

Instructions

  1. Prepare the Mashed Potatoes:
    • Place the cubed potatoes in a large pot, cover with water, and add a pinch of salt.
    • Bring to a boil, then cook for 15-20 minutes until tender. Drain and return to the pot.
    • Add the heavy cream, butter, and sour cream, then mash until smooth. Season with salt and pepper. Keep warm.
  2. Cook the Steaks:
    • Preheat your oven to 400°F (200°C).
    • Generously season the ribeye steaks with salt and pepper on both sides.
    • Melt 4 tablespoons of butter in a large oven-safe skillet over medium-high heat, adding the minced garlic, thyme, and rosemary.
    • Place the steaks in the skillet, searing for 2-3 minutes per side until a golden crust forms.
    • Transfer the skillet to the oven and cook for 5-7 minutes for medium-rare, or to your desired doneness.
  3. Serve:
    • Let the steaks rest briefly after removing from the oven.
    • Serve the mashed potatoes topped with the juicy garlic butter steak, drizzling any remaining garlic butter over the steaks. Garnish with chopped chives if desired.
